In the Peruvian Andes not far from the city of Cuzco at an altitude of around 4500 metres there lies the true treasure of the Incas: the potato. Even 8000 years ago, the aboriginal tribes in the mountain regions grew potatoes. Today this legacy is maintained by the indigenous Quechua people. The farmers cultivate an estimated 3000 different varieties in their fields on the steep mountain slopes. We all profit from the struggle of the Andean farmers to preserve their heritage. The potato is one of the world’s most important staple foods.
